Christmas Egg & Veggie Casserole!

Cut English muffins in half and fill in bottom of pan.

Cut up tomatoes, mushrooms, scallions, onions and cook over medium heat until
tomatoes are cooked.

Jac cooking veggies.

Layer : Muffins, Veggies, Cheese and Eggs and let sit in fridge overnight.

THe next morning, take out and bake at 350 for roughly an hour...until the eggs are cooked.

Serve with sour cream. The kids LOVED it!!
