Hot Sauce Mom UPDATE

I posted this November 30th of 2010 regarding Jessica Beagley..the hot sauce mom.

She has 6 children, one of which was the 'star' of the video played on Dr. Phil.  You may remember it like remnants of vomit.

This dumb bitch turns my stomach.  "We've tried a lot of different things to punish the kids..." she says and goes on and on about how these kids must think "Is that all you got?"

Shut the front door, lady.  I'm STILL so pissed about this.   I cannot, for the life of me, wrap my head around some 'mother' pouring hot sauce in her child's mouth and make them hold in there as punishment.

Well..good news. She was charged with misdemeanor child abuse in an Anchorage, Alaska courtroom.A police investigation began after Beagley appeared with "Dr. Phil" McGraw in November of last year, according to court documents. Viewers flooded the Anchorage Police Department with calls after the show aired, police said. The Anchorage Municipal Prosecutor said in court documents that the behavior in the video violates the municipal code protecting against child abuse.

She has a lawyer...who seems to be just about as smart as she is. He says (in her defense) "Nothing Jessica has done is criminal. If you give your child food that has hot sauce on it - maybe they eat Mexican food - does that mean its child abuse?"

Are you kidding me?  How do lawyers manage to walk and talk at the same time without getting a brain cramp that renders them incapacitated?

God forbid this woman suffer a stroke that paralyzes her.  It would certainly be awful to be put into a nursing home and treated like shit, abused and humiliated.  Oh no, that would just be horrible.

Superbowl Foods

In my home, we don't watch the Superbowl.  Okay, well we watch the commercials and check out the Half Time Show.  And by 'we', I mean my kids and I.  The mister is either watching it in his bedroom (yes his bedroom since I sleep on the sofa...so I can GET some sleep) or he's at a friend's house for some male bonding.

We'll see how it goes this year.  But the most important thing is the food.  Yes....the food.  Not the game, not the score - in fact I don't even know who's playing. Seriously. I don't care.

FOOD people. THAT'S what Superbowl Sunday's about.

So I'm starting to put together some type of menu.  Well, after the mister took over the chili making.  I had planned (in my head) to make chili for Superbowl.  The mister went and purchased all the ingredients for chili last night.  Great minds - just off timing. He wanted the chili during the week.

I will also be making cornbread. Not just any cornbread, the moisty variety.

I just found a recipe for a spin on nachos that has my stomach wanting Sunday to hurry it's ass up and get here already.

I think I'll go to Walmart today and get a fondue set since I haven't been able to find ours since we moved almost 3 years ago.  Cheese is my best friend. Well, I like to think so.

Well, there ya have it!  Chili, nachos, cornbread, fondue.....man we're all going to hate ourselves.

Fried Tempeh Fingers

So, once again, I cooked dinner and forgot to take photos during the preparation. Yay.  But it's so easy, I don't think you all with need any.

I'll start from the very beginning.  What is tempeh?  In lamens terms : it's fermented soybeans and formed into a cake like form.

I know, I know...sounds gross.  Get over it.  It's similar to a very firm vegetarian burger patty. Tempeh's fermentation process and its retention of the whole bean give it a higher content of protein, dietary fiber, and vitamins. It has a firm texture and strong flavor. Because of its nutritional value, tempeh is used worldwide in vegetarian cuisine; some consider it to be a meat analogue.  Perfect and EASY for me to cook for my family who half are vegetarians and half are meatavores.

I got my tempeh from HEB and one cake is roughly $3.00.  I got two...it fed our family of four...with a few 'chicken fingers' left over.

First take out the tempeh from the wrapping and put it in a steamer and steam for about 15 minutes.  Steamer basket is the way I went. This allows the tempeh to soften and absorb all the seasonings. At this point you can choose to marinate the tempeh for extra flavor, but honestly I don't think it needed it.

I took the tempeh out of the steamer and sliced it into 'fingers' for frying.  I made a batter of flour, salt, pepper, cayenne, paprika, garlic salt, season all, parsley flakes....you can add practically anything...then added milk and stirred.

Dip the tempeh in the batter and fry in a skillet. When they're nice and browned, removed and put on a paper towel to drain.

I made gravy and served with mac and cheese and fresh peas.

This is the cell pic I took last night.  The gravy was served in a bowl for dipping.  Like I said, SO didn't stop to think to take photos!

The tempeh takes on the texture and flavor of chicken fried steak or chicken fingers.  It was a hit.  Even my meatavore mister ate it.  I'm sure half to humor me, and half because he's not a douche and will try just about anything.

Instead of making a batter you can dredge in soy milk and flour, make a wash of eggs and flour....any way really.
