Spinach Quiche

Today is a TAKS testing day for my oldest.  I can't stand TAKS.  I can't stand that children are being taught how to test rather than actually learning. The TAKS does not prepare students from the future, much less college. Most of the material covered won't be used again.

But I digress.

Anywho....on these mornings I like to have something awesome to send her out for a day of crap. So last night after the dinner-ness was all done, I started on the Spinach Quiche!




8 Eggs about to be beaten.

Sauted the veggies. 

Added the spinach.


Mixing the cottage cheese with the eggs...then added salt and pepper. 

Mix it ALL up!

And bake at 325 for an hour.



Tada!

Mmmmmm




I reheated the Quiche in the morning. 

DELISH!





List of Ingredients:

8 eggs, beaten
8 oz. package frozen spinach
16 oz. cottage cheese
1 bunch green onion, chopped (white part only)
½ cup onion, chopped
1 cup mushrooms, sliced
2 cloves garlic, mincedl
salt
pepper


1. Preheat oven to 325 degrees F (165 deg C). Lightly grease a 9-inch baking dish.
2. Saute garlic in oil for 1 minute, then add yellow onion and mushrooms, and green onion. Cook until tender.
3. Place spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft. Drain off all remaining liquid from the spinach. Stir in eggs, cottage cheese, and sauteed onions and mushrooms. Add salt and pepper, to taste. Pour mixture into prepared pan.
4. Bake uncovered in oven for 1 hour, or until eggs are set.

*The only thing I added extra was a bit of cheese on the top.

Naked Burritos

That's right - Naked Burritos.

I said yesterday, "I'm making Naked Burritos......not making burritos naked."  No one wants that.

Since I'm having the fam follow a low cab - no white carb - eating plan, I found a recipe online that I thought we would enjoy.  And we did.

It's basically what's in a burrito minus the tortilla and rice.  And I was able to steal some before it all disappeared to have for lunch the next day. Whew.

Easy Peasy Recipe.....duh.

Ingredients :

Chicken (I have split breasts that I boiled before hand and took off the bone)
Onions
Avocado
Tomatoes
Black Beans (drained and rinsed)
Chunky Salsa
Sour Cream
Cheese

*I grabbed a skillet and began to cook my onions in a little bit of EVOO.  Then suddenly realized I needed a bigger one.  So switcho-changeo then added the cooked chicken.



Then added some tomatoes and covered and cooked a little more.

Then added drained and rinsed black beans and chunky salsa. Cooked a little more.


Then added avocado and cooked a little more.

Ta da! Naked Burritos!
